The Philippines enjoys tropical weather all year round. Our warm climate and availability
of local ingredients like coconut and carabao’s milk has shaped the time-honored
tradition of enjoying sorbetes or “dirty ice cream” every afternoon. This sweet delight is
typically peddled on the streets by a sorbetero or ice cream vendor. Distinctive silver
carts are painted in bright, festive colors. They carry with them a bevy of flavors that
include ube, cheese and local cacao. Sorbeteros typically ring a handheld bell to let
customers, most of whom are children, know that they have arrived in their street. This
would then signal the well-loved afternoon routine of indulging in ice cream while
enjoying the company of neighbors outdoors.
